Remove log truncation during build and redundant --stacktrace arguments

Fixes #2717 .
It seems truncating log messages during build had side effects running on Github Actions, causing build errors being ignored and still considered a success build. Removing them to ensure no one gets in the way on build/test failures.
Also removed --stacktrace arguments on release build actions. Build problems (if there is any) should have been dealt with on debug builds and production builds should be always smooth and fast with only error but not with debug log messages.

* add testPlayDebugUnitTest to all workflows, to ensure PRs or releases had been tested (though code coverage is still small)
