Github workflow tweaks: add --stacktrace to gradle builds

* update octokit version to 2.0.2, as I had problems getting things to work with octokit 2.0.0
* add testPlayDebugUnitTest to all workflows, to ensure PRs or releases had been tested (though code coverage is still small)
