deps: consolidate dependency updates (1 PR) (#116)

Consolidates the following Dependabot PRs into a single update:

- #113 - update pymdown-extensions requirement from >=11.0.2 to >=12.0.1

Supersedes #113

Docs build verified locally with `mkdocs build --strict` against
pymdown-extensions 12.1.
